Pieces of chicken are bathed overnight in a marinade of yogurt, fresh garlic, grated onion and a careful balance of Afghan spices that tenderise the meat and infuse it with deep, layered flavour. Skewered and grilled over live charcoal, every piece develops a beautifully smoky crust while staying juicy inside.
